Mexican Corn Salad

This is a great summer time salad.  The hubby and I eat it on a bed of lettuce.  The boys eat in on chips either way this is so YUMMY! 

Thanks to http://mcillecespot.blogspot.com/2008/06/mexicorn-salad-la-jeni.html .   You will notice a pattern on this blog.  Every idea will be from someone or somewhere else.  I love to decorate but as far as original ideas I do not have them.  As for cooking I only learned how after I started reading blogs.  Thanks everyone my family loves dinner now.

Mexicorn Salad
2 ripe avocados, peeled and diced
1/2 bunch fresh cilantro, chopped
3 tomatoes, diced
1 1/2 cup Jack/Cheddar cheese, shredded
1 can black beans, drained and rinsed
1 can mexicorn, drained and rinsed
Combine all above in a large bowl. Mix the juice of 2 limes, 1 Tbsp. olive oil, a pinch of salt, and garlic powder to taste and drizzle over salad. Serve with corn chips.

Calling all creative minds














There are so many creative people out there can someone HELP me! My style is very Pottery Barn. (Well, at least that's what I want it to be) I saw a post today that made me remember I still had these hidden in the closet. http://thehappyhomebody.blogspot.com/ I want to put them at the bottom of the staircase landing.
